The popular phrase, “Going green,” means many things to many people.
For some, the first thing that comes to mind is getting serious about recycling. To others, it is more about reducing their consumption of water and non-renewable energy sources.
And then there are the true environmentalists who seek out more obscure methods to reduce their carbon footprint, such as driving less; because they are aware of all the greenhouse gases that cars create.
But how many of you realize that greenhouse gases created by raising the livestock that feeds us amounts to a much greater number than that from the cars that we drive?
Yep, you read that right. It’s not always a popular idea, but it’s the hard reality. And by reducing our meat intake, we can, of course, reduce those gases immensely.
Now I can’t really fault anyone who struggles with the idea of going completely vegan or vegetarian. As environmentally motivated as I am, meat is a really treasured part of my meals. It would be sorely missed if I were to simply quit “cold turkey.”
That is why I prefer the milder approach of a weekly “Meatless Monday.” It doesn’t have to be Monday, but it does have a nice ring to it. If every family in the U.S. were to take the meat out of one meal per week, this is what would happen:
Meatless meal ideas
If you’re used to meal planning in a meat and potatoes kinda way, coming up with delicious vegetarian-minded recipes your family will love, may feel a bit overwhelming. So start with some of the meals your family already loves. Now think about how you could take the meat out, substituting another protein like beans, and still have them scraping every last morsel. It really is possible.

As you finish your meatless meal preparation and serve your family at the dinner table each Monday evening, you can appreciate the fact that you are contributing to a better planet. There are so many reasons to go meatless once-in-a-while. It’s also a lot easier on the heart!
